You will need:

For the chicken

  1. Chicken breast: 3 Large (diced)
  2. Red bell peppers: 2 (chopped)
  3. Large onion: 1 (diced)
  4. Diced carrot: ¼ cup

For serving

  1. Roasted cashews
  2. Steamed white rice
  3. Cilantro
  4. Thai basil (thinly sliced)

For the sauce

  1. Reduced soy sauce: ¾ cup
  2. Raw honey: ½ cup
  3. Juice of 1 lime
  4. Grated ginger: 1 tsp.
  5. Sweet chili sauce: 2 tbsp.
  6. Rice wine vinegar: 2 tbsp.
  7. Salt
  8. Pepper


  1. Take the bowl of your slow cooker and add diced chicken and vegetables to it
  2. Take a bowl to combine ingredients of sauce together
  3. Now pour this sauce over your chicken and vegetables and cover the cooker with its lid
  4. Let the chicken cook on low heat for about 6 hours
  5. Now, divide the steamed rice in plates and spoon the ginger on top
  6. Garnish with the serving ingredients
