Have a blender? That’s all you need to make yummy carrot soup! Well, that and the right ingredients, of course.

Here’s a super simple recipe that will make sure you become a superb carrot soup cook!

You will need:

  1. Carrots (unpeeled and chopped): 6 cups
  2. Yellow onion (Chopped): 1
  3. Vegetable stock: 3 ½ cups
  4. Coconut oil: 2 tbsp.
  5. Full fat coconut milk: 1 can
  6. Fresh ginger root (chopped): 1 tbsp.
  7. Red pepper flakes: 1 dash
  8. Salt
  9. Pepper

Pesto:

  1. Garlic clove: 1
  2. Cilantro: 1 cup
  3. Olive oil: ¼ cup
  4. Freshly squeezed lemon juice: 1 tbsp.
  5. Salt
  6. Pepper

Directions:

  1. Take a small skillet and heat it on medium
  2. Melt the coconut oil in it and add onions
  3. Sauté the onions until they are golden brown. Transfer them to the blender
  4. Add everything else to the blender as well
  5. Blend for about 8 minutes on high speed
  6. As it blends, make the pesto in a small food processor. Simply combine all the ingredients
  7. Transfer soup into serving bowls
  8. Add pesto into it
