Crepes have probably been the best pancake hack ever. Not only are crepes super easy to make, they are super versatile. There are practically endless savoury and sweet filling options that can make crepes a perfect serve for breakfast, lunch, dinner, or even dessert.

If you still haven’t mastered the art of whipping up the perfect crepe, here’s help:

You will need:

  1. 2 eggs
  2. 1 cup flour
  3. 2 teaspoons sugar
  4. ¼ teaspoon salt
  5. 1 ¼ cups milk
  6. 2 tablespoons liquid butter (for the batter)
  7. ½ teaspoon oil/butter for greasing the pan

Method:

  1. Combine all the ingredients (except oil for greasing) in a large bowl and whisk. Once the batter is well combined, strain it into a glass pitcher to remove any lumps.
  2. Next, cover the pitcher with a plastic wrap and chill it in the refrigerator for about an hour. This will prevent your crepes from breaking apart.
  3. Heat a non-stick pan on medium heat and using a cooking brush, spread oil/butter on the pan.
  4. Pour the batter into the pan just so it fills ½ the diameter of the bottom of the pan.
  5. Gently tilt the pan in a rotating motion, to spread the batter over the entire area of the pan.
  6. After 30 seconds, flip the crepe and cook for another 30 seconds.
  7. Transfer the crepe to a large plate and wait for it to cool down completely before you add the fillings.
  8. Once cool, spread lemon curd, chocolate, fruit jam or anything you like. Fill in with bananas, nuts or bacon and you will have made the perfect crepe meal for yourself.
